The wine Casa do Sol is based on reasoned viticulture
and natural, where the most important thing is the follow-up and vineyard work from pruning to harvesting. In
winery, we work with the utmost respect for identity and
typicality of our grape, applying an intuitive enology
and little interventionist. After the harvest and the
selection of bunches, made both by hand, is done
a cold film maceration, to enhance the
primary aromas, which are found in the skin of the grape.
The subsequent fermentation is natural thanks to the
use of native and own yeasts.
