Early Harvest Extra Virgin Olive Oil / Premium

It is an Extra Virgin Olive Oil with a medium green fruitiness, and with a bitterness and spiciness to accompany it. All the direct and retro nasal notes are clearly green, highlighting the leaf, green wood and fig tree. The palate enters smoothly, and bitterness and astringency quickly appear, accompanied by a persistent spiciness.


This special harvesting technique is focused on harvesting the olive early in October, rather than in November or December. During this phase of the olive grove, it takes more olives to produce 1 liter of olive oil, therefore the olive oil is much more concentrated and intense with massive amounts of flavor. This olive oil is to be used on its own, or as a key ingredient in a salad or tapa.
