The Martinez Saez family have been working the lands of central Spain for generations, both in farming and creating machinery to farm the lands. This low-key family winery once thrived in larger quantities of bulk wine until recently, when Angel decided quality was the way forward. This recent transition from volume to a much more quality focus has produced amazing results. With the help of new technology, investment in premium oak, limited yields and new winemaking local talent, the transformation is ready to share with the world.


MARTÍNEZ SÁEZ SELECCIÓN

VARIETY: Petit Verdot, Cabernet Sauvignon and Syrah.

DATE OF HARVEST: Taking place early in the morning at the end of September

WINE TIPE: Red Crianza

 

ELABORATION: Grapes from our own vineyards. Fermentation and aging processes are carried out separately until Coupage. Ganimede System with Temperature - controlled fermentation. Malolactic fermentation takes place in oak. Aging 14 months in French oak barrels.

 

Flavor: Intense cherry red high layer with Ruby. Dense light colored teardrop.

 

Elegant Nose. Delicate ripe black fruit aromas blend with spicy hints and balsamic notes. There are also important dairy touches. Reminders of chocolate and minerals complete the complex smelling phase.

 

On the palate, the wine has an elegant fullness. It shows a tannin balance with the acidity. It is fleshy and well-structured. Not only that, but it has a long-lasting and intense finish.

 

FOOD PAIRING: For its fleshiness is an ideal wine to accompany red meats, game, stews, roasts, cured pork products and cured cheese. Ideal serving temperature between 12° and 18 °C.

MARTÍNEZ SÁEZ SEMIDULCE


VARIETY: Moscatel - Chardonnay

DATE OF HARVEST: Mid-October, taking place early in the morning

WINE TIPE: Semi Sweet White

 

ELABORATION: The Slow fermentation at very low temperature stops to manta in the natural sugar of the grape.

 

Flavor: It has an intense lemon yellow color with green tones. Dense teardrop

 

Highly intense nose with notable floral notes (Jasmine and fennel flower) that later become stone fruits (apricot), tropical fruits and citric notes.

 

In the mouth it is very enveloping. It has a noble and refined balance between sweetness and the fresh acidity, with solid step and perfumed finish. Clean and lingering aftertaste for the weight of fruits.

 

FOOD PAIRING: Thanks to its marked acidity this is a great aperitif wine. It goes well with pate, blue cheeses and Roquefort. Ideal serving temperature between 4° and S°C.

Orce Crianza

VARIETY: Cabernet Sauvignon - Tempranillo

DATE OF HARVEST:1st week of October, taking place early in the morning Wine Type: Red Crianza.

 

ELABORATION: Grapes from our own vineyards. Temperature - controlled fermentation. Devatted at 18 days. Aged mainly in French oak barrel for 12 months and a little of American oak. In this process, malolactic.  Fermentation takes place. After bottling, wine rounds in bottle for a few months.

 

FLAVOUR: Intensive red cherry color of upper-middle layer with Ruby and light hints of brick hues. Striking and bright. Fine aromas of ripe fruits (plum, blackberries) on the nose. In harmony with spicy aromas and notes of Mediterranean scrub. Well integrated Wood. Elegant and Complex. Tannicity is in balance with the acidity. It is powerful, fleshy and well-structured. Intense and Persistent finish.

 

FOOD PAIRING: Ideal wine with Iberian ham and sausages, semi - cured cheese, beef and scrambled eggs. Ideal serving temperature between 14° and 18°C.

Orce Syrah

VARIETY: Syrah

ELABORATION: Grapes from our own vineyards. Temperature - controlled fermenta­ tion. Devatting at 14 days. The malolactic fermentation takes place in stainless steel vats.

 

FLAVOUR: Intense cherry red, high layer, with blue trim and violet tones. It highlights a light colored teardrop. Lively and bright. Nose with powerful black fruit aromas (blackberries, plums, etc.) and some light touches and nuances of roast Mediterranean forest. There are also important dairy touches.

 

It shows great balance between alcohol, acidity and tannin on the palate. Intense, full-bodied and very round. The final in the mouth is long and leaves a great remembrance.

 

FOOD PAIRING: This wine is a great option to accompany red meats and game, turkey and pork, spicy foods, cold cuts and cheeses such as Roquefort and goat. Ideal serving temperature between 12° and 14 °C.

Orce Macabeo-Verdejo

VARIETY: Macabeo

WINE TYPE: Young White Wine

HARVEST: 3rd week of August, taking place early in the morning

 

ELABORATION: Grapes from our own vineyards. Maceration for 6 hours. Must Cleaning by Static decoupage. Temperature - controlled fermentation.

 

FLAVOUR: It has a steely pale yellow colour with greenish highlights. Bright. On the nose it appears Elegant floral notes (white flowers) which later gives way to fresh fruity aromas of Green fruits (Apple, pear, etc.) mixed with light tropical notes (pineapple, mango).

Elegant and subtle.

 

In the mouth is fresh thanks to its marked acidity, full of sensations. It shows a perfect harmony between its components. Retronasal phase reappear sensations of your nose. The aftertaste is long and clean.

 

FOOD PAIRING: Perfect wine to accompany fish dishes, seafood, baked fish, smoked foods, vegetables, cured cheeses, soft cheeses, omelettes, soups and creams. Ideal serving temperature between 6° and 8°C.

Orce Chardonnay

VARIETY: Chardonnay

WINE TYPE: Young White Wine

HARVEST: 4th week of August, taking place early in the morning

 

ELABORATION: Grapes from our own vineyards. Cold pre-fermentation maceration and slow fermentation at controlled temperatura. Subsequently it is matured on its lees.

 

FLAVOUR: Pale Straw yellow with slight greenish reflections. Bright and glyceric. Nose with light notes of Stone fruits (peach), that later they give way to hints of ripe tropical fruits.

 

Work on lees gives an interesting complexity.

In mouth is intense, tasty and charming, showing good harmony among its compo­ nents.

 

Creamy sensations are perceived by its great structure. The finish is enveloping and balanced.

 

FOOD PAIRING: This wine goes wonderfully with White fish, smoked food, sushi, seafood, White meats, vegetarian food, pastas, chicken and poultry.

Ideal serving temperature between 7° and 8°C.

HARVEST: 1st week of September, taking place early in the morning

 

ELABORATION: Grapes from our own vineyards. Temperature - controlled fermentation. De-vatting at 14 days. Aged in oak cask for 120 days, where malolactic fermentation takes place.

 

Flavor: Intense cherry red, middle layer, with blue trim and violet tones. Attractive and bright.

 

Nose with fine aromas of ripe fruit (blackberries, plum, etc.) with hints of licorice, all of this in harmony with light spicy and balsamic notes, well - integrated wood.

 

In the mouth, it shows subtle tannins in balance with acidity. Slight bitter nuances give it long and character. It is fresh, full-bodied and well-structured. The finish is intense and persistent.

 

FOOD PAIRING: This wine combines nicely with creams, vegetables, stews, red and white meats, game, roasts, poultry, cured ham and cured cheeses.

Ideal serving temperature between 12° and 15° C.

ELABORATION: Grapes from our own vineyards. Pellicular maceration for 8 hours. Cleaning the juice by Static decoupage. Temperature - controlled fermentation.

 

Flavor: Intense carmine pink. Bright edge with bluish tones. Striking and bright.

Strong and delicate aromas of fresh strawberries and blackcurrant combined violet floral notes and light milky (strawberry yogurt). In the mouth, it's smooth and sweet. Strong and delicate at the same time. It presents very good body. Delightful fruity impression in the finish. Persistent wine.

 

FOOD PAIRING: It can be paired with an extensive menu: salads, fish and seafood, meats, pasta, rice, cheeses and desserts. Ideal serving temperature between 6° and 8'C.

Escamel Blanco

VARIETY: Macabeo and Chardonnay

WINE TYPE: Sparkling White Wine Reserve Brut Nature. Traditional Champenoise method.

 

ELABORATION: Made from "free run juice" of Macabeo and Chardonnay grapes from our own vineyards.

 

This wine is made by a second alcoholic fermentation in the bottle, where mature a minimum of 36 months in the cask with its own lees, before disgorging and filling with its own wine. Not using "Liqueur d'expedition".

 

Sparkling wine with a bright and attractive pale gold colour. Its tiny and abundant bubbles rise forming a consistent rosary and a very stable crown.

 

FLAVOUR: Deep, Intense and pleasant. Initially, it evokes hints of mature white fruits. Slowly its complexity increases and aromas of a long barrel-ageing appear.

 

Memories of toast and a pleasantly refreshing citrus background complement its distinguished aroma. The creaminess of its mousse is perfectly integrated on the palate. In the mouth is fresh, greedy and evocative.

 

All the aromas perceived in the glass are displayed in its long finish.

 

FOOD PAIRING: Very special wine due to its complexity and aging.

Ideal as an apéritif or to accompany all kinds of red and white meats, rices, stews and soups.

 

Its acidity cleans the taste buds and enhances the flavors of ham, cured cheeses and pates. Ideal serving temperature between 5° and 6° C.

Escamel ROSADO

VARIETY: Syrah and Cabernet

WINE TYPE: Rose Sparkling Reserva Brut Nature. Traditional Champenoise method.

 

ELABORATION: The base wine is made with a short cold maceration and slow fermentation at controlled temperature. Second fermentation in the bottle and a period of aging for 36 months on its lees.

 

Flavor: Light Salmon pink with silver highlights. Fine and persistent bubbles, with good and elegant release. Its long mature on its lees gives aromas of

smoke and dry fruits.

 

In the nose, notes of berries and candied currants.

Finally, bay leaf aromas make an intense and complex nose.

 

36 months in bottle make fine and elegant bubbles, with powerful and refreshing release thanks to its acidity. All of these make a great volume on the palate. Good persistence and excellent end in via retronasal, with memories of red fruit nuts (figs and dates).

 

FOOD PAIRING: Due to its subtlety, this wine is perfect to accompany soft dishes. Ideal to pair with seafood, especially oysters, and also with fish and sushi. Marked acidity makes it perfect to be served with soft cheeses and nuts.

 

Serving temperature between 6° and 8° C.
